HOW TO PREPARE EGUSI(MELON) SOUP

  Egusi soup is favourite of most people in Nigeria, while some take it with Eba,others take it with fufu or pounded yam.Known for its thickness,egusi soup is very much loved by the Edo speaking people of Nigeria who love to take it with pounded yam especially,any
stranger that tries out this soup will definitely fall in love with it.Below are requirements for egusi soup:

1)Melon

2)Palm oil

3)Tin tomatoe

4)Onoin

5)Pumpkin leaf

6)Crayfish

7)Seasoning

8)Meat or fish

9)Pepper

10)Stockfish

   PROCEDURE

  Heat the oil on the fire,mix the melon (that must have been grinded)with water to form a paste,add the tin tomato,pepper onion to the paste and fry in the oil.Turn continuously in the oil until very thick,add little water to it.Add the seasoning,leaf,salt,meat,stock fish and crayfish,allow to cook for sometime until ready to be served.
